i like lists

So, Kira, I’m working on a post about all the food I made for Nathan’s birthday party. I sort of went crazy and made a ridiculous amount of stuff from scratch, though none of it was that fancy really. Anyway, on a related note, I don’t go back to school until the 25th (or so?), so here is a list of all the things that I’m going to make before then.

1. Dulce de leche!!! My mom bought me a jar for Christmas, because she is a genius, and while I am totally psyched to have real Argentine dulce de leche, I immediately realized that I needed to learn how to make it. And don’t worry, the recipe at that link as instructions for canning, so if this really does work, I will send you at least one jar.

2. Alfajores? Maybe. I’m not that into baking sweets, but as long as I’m making dulce de leche…

3. Veggies burgers. I made black bean burgers yesterday, and they turned out amazing, so I’m thinking that I will experiment with this a bit more, and freeze a bunch so I’ll be prepared when school starts.

4. I swear there were so many other things…

5. Oh, fresh pasta! Did I tell you that my parents bought me a pasta roller + cutter attachment set for my stand mixer? I forgot it at their house because I’m an idiot, but I think I’m going to go up north next weekend, so then I’ll be ready to experiment. First on the list is definitely homemade lasagna; I’ve been planning that for months.

6. Also, ricotta, for the lasagna. My mom’s grandpa was a cheese maker, so I’ll be reconnecting with my roots, sort of.

7. Dumplings! Finally, I’ll be able to use that cookbook I bought when I visited you.

8. Also, I want to try making fresh rice noodles, which apparently you make in similar ways to rice flour dumpling wrappers.

9. Seriously, I might be a crazy person. But at least I’ll be a crazy person eating delicious food. I promise I’ll tell you more about these things when I make them, and I’ll definitely write something about the black bean burgers. Did you make veggie burgers at some point? I feel like you told me something about making them… maybe when you bought those dry soy beans?

Okay, I’m going to stop here, because Nathan finished washing my mixing bowl, so it’s time to try making crepes!
